Analysis of microbiological composition of meat of selected game animals

Abstract

Meat is one of the most valuable foods in a healthy and balanced human diet. It is a very valuable source of protein with high biological value, performing many important functions in the body. The purpose of this study was to analyze the microbiological composition of selected wild game meat, i.e. wild boar, roe deer and deer, using microbiological methods to determine the coefficient of the total number of microorganisms (L) in meat during storage for 9 days and to control for the presence of pathogenic bacteria of the genus Salmonella, Yersinia, Escherichia and Listeria. The study showed that the total microbial count in all meat samples increased with storage time. After 9 days, deer meat had the lowest total microbial count, while roe meat had the highest. The analysis conducted for microbiological control confirmed the presence of pathogenic Escherichia and Yersinia bacteria in all samples tested.
